Quick Tomato Sauce

This comes together so quickly and it tastes good, can't go wrong with it for a weekday dinner or any meal on a tight schedule.

INGREDIENTS
3 tbsp olive oil
1 lb (6-8) roma or plum tomatoes, diced (or 1 14oz can diced tomatoes)
4 cloves garlic, finely diced
1 bunch fresh basil
1 lemon
4 servings of pasta, cooked until just before al dente (including the 1 cup reserved cooking water)
SPECIAL EQUIPMENT
10-12" Saute Pan
DIRECTIONS
In a saute pan on medium heat, heat the oil until shimmering and then add in the garlic. Saute the garlic for 2-3 minutes until fragrant
Add in the diced tomatoes and stir to combine. Continue to saute, smashing the tomatoes with the cooking spoon to get out the pulp.
Turn the heat to medium low, and continue to simmer for 20-30 minutes, or until the sauce is thicker and the acidity of the tomatoes is no longer present in the taste. Add in a squeeze of lemon to your taste.
Boil your favourite pasta, and when it’s a tad before al dente, add it to the tomato sauce. Stir to combine, adding the cooking water ¼ cup at a time until the sauce is the correct consistency and the noodles are covered in the sauce.
