Tortellini with Peas, Pancetta and Cream

This dish is rich, luxurious - and takes about 15 minutes to make. It's a great way to make yourself feel special on a Friday night in, having come home from work and looking to make something fancy without the prep time of a Sunday supper.

 

Ingredients

2 cups cheese tortellini

1 cup heavy whipping cream

1 cup frozen peas

1/4 cup pancetta

1/4 onion, finely diced

1/2 cup grated Parmesan, plus more to top

1/2 tsp freshly ground black pepper

1/4 tsp freshly grated nutmeg,l

 

Directions

  1. Start a pot of boiling salt water for the tortellini. Once it’s boiling, add the tortellini and cook until al dente

  2. Sauté the pancetta in a pan on medium high until it begins to give up some of its fat. Add in the onions and cook until the onions are softens and he pancetta browning on the sides

  3. Add in the cream and frozen peas to the pan, sauté to thicken the cream, adding pasta water if necessary to thicken. Add the pepper, nutmeg and tortellini

  4. Toss the ingredients in the pan until well combined and sauce is thickened. Serve with a topping of grated Parmesan and enjoy!
